Curtido De Cebolla y Tomate – Red Onion and Tomato Salad

Some of my dishes will be served with this onion and tomato curtido, pico de gallo or a lime marinated based salsa. The most basic form of curtido is a basic onion curtido. It’s a nice and fresh form of salsa. I usually make a large batch and keep in the fridge, adding it to dishes or salads as needed.

This variation of curtido pico de gallo or salsa is made with of red onion and tomato. The onions and tomatoes are sliced thinly and marinated with lime juice, olive oil and cilantro. In Ecuador, this salsa is a must-have side for traditional dishes.


  • 1 Small Red/Purple Onion – sliced thin
  • 1 Tomato – sliced thin
  • 3 Cilantro Sprigs – minced
  • 2 Lemons
  • 3 tbls salt
  • 3 tbls Olive Oil
  • 1/4 tsp Coarse Grind Black Pepper

Step 1– slice onions, place in a mixing bowl and fill with hot water and 2 tbls of the salt. Stir and let sit for 20 minutes to remove acid.

Step 2– Drain water (do not rinse) and add pepper, olive oil, remaining salt & pepper. Get your hands dirty! Squeeze the juice of both lemons and mix with your hands squeezing the onions.

Step 3– Add the sliced tomatoes and cilantro… mix well 🙂
